Garlic Chives
กุยช่าย
Kui chai: flat, garlicky chives for pad Thai and dumplings.
Garlic chives have long, flat leaves and a gentle garlic flavour. They came to Thailand through Chinese cooking and are one of the defining ingredients of pad Thai.

| Flavour | Mild garlic and onion, fresh and grassy |
| Used in | Pad Thai, kanom kui chai dumplings, stir-fries |
| Substitute | Spring onion greens with a little crushed garlic |
How it is used
Cut into 4 cm lengths and tossed into pad Thai at the very end, with a few more served raw on the side. Chopped finely into the filling of kanom kui chai, steamed or fried chive dumplings, and stir-fried with pork, tofu or bean sprouts.
Buying and storing
Sold in bunches in Asian grocers. Choose dark green, flat leaves without yellow or slimy ends. Wrap them in paper and keep them in the fridge for up to five days.
Cook’s tipAdd garlic chives after the heat is off. Cooked for more than a few seconds, they turn limp and lose their colour.
