Chiang Mai (TH)
Khao Soi Mae Sai is a modest noodle shop on Ratchaphruek Road, a short ride north-west of the old city. It does one thing above all: khao soi, the coconut curry noodle soup of northern Thailand, with your choice of meat.
The Michelin Guide gives it a Bib Gourmand for good cooking at a low price, and inspectors single out the depth of its curry broth. Bowls are on the small side, which is why many people end up ordering a second.
Expect simple tables, fast service and a steady stream of locals and visitors. It runs from breakfast to mid-afternoon and fills up quickly at lunchtime.
What to order
- Khao soi gai: chicken on the bone in rich curry broth with soft and crispy egg noodles
- Khao soi neua: the same soup with tender stewed beef
- A second smaller bowl with a different meat, since portions are modest
- The side condiments for adjusting each bowl to taste
Good to know
- Go when it opens at 08:00 or mid-morning to avoid the lunchtime crowd.
- Bring cash; Michelin lists it as cash only.
- It is closed on Sundays.
